July “Themed Weekends”: MEET THE BAKERS!




Every weekend in July, Poeme will be hosting our “Themed Weekends” event, where we will have six NEW flavors available for that weekend (in addition to the current menu) following a specific flavor theme! See more information about this event here. This event will showcase each of our macaron baker’s creativity and talent, as four of the six flavors each week will be assigned to each one of our macaron chefs (the final two will be led by our head chef & owner, Sandra). Vote for your favorite flavor each weekend here and on our Instagram (@poeme_macarons) stories & Facebook page. The winning flavor will return the following Wednesday-Friday as a special release flavor, and the staff member with the winning flavor creation will receive a bonus!

Brooklyn Knutson, Pastry Chef (pictured above):


*BROOKLYN’S FLAVOR CREATION FOR 7/10-7/11 (Ice-Cream Inspired Weekend): Mint Matcha Chip*


Hi my name is a Brooklyn Knutson! Growing up homeschooled gave me ample opportunities at home to ignite my love for baking. Bless my mother for always encouraging me, keeping the pantry stocked with baking ingredients, and trusting I wouldn’t burn her house down when I would try new techniques (like flambéing for the first time). I’ve always grown up making cakes for family birthdays or events, but mostly baking because I loved the challenge and always found it rewarding.  I was never quite sure what direction my career would take, but with some encouragement from my family and high school counselors I went to culinary school in Breckenridge, Colorado at Colorado Mountain College. I trained in an apprenticeship program and quickly found my love for baking and pastry working in seven different restaurants as the pastry cook. Working in this many restaurants challenged me to adapt to a new team, create new menu items, and learn from my successes and failures. Pushing myself to create new things, and learning how to do them better the next time, really grew my passion for the art to this day.

I found my love for pastry arts at a very young age by baking with my dad and mom. My interests grew and I attended August  Escoffier school of culinary arts and revived my pastry arts certificate last February! I’m very energetic and passionate about doing what I love! I love showing off my creative side, and I love bringing people joy through what I make in the kitchen! I also have a cat named sokka who is my pride and joy.

Hey there! I’m Hayleigh and I just recently started at Poeme! I graduated from Escoffier School of Culinary Arts in 2020 and I quickly became obsessed with perfecting macarons and coming up with new flavors. I’m so lucky that I get to do what I love with such great coworkers! I can’t wait to create some new flavors for you all!

I am from Florida, and after attending the University of South Carolina, I decided to follow my passion for baking, and transfer to Johnson and Whales University in Denver. There, I completed my degree in baking and pastry and have enjoyed working in various capacities in the food industry; including teaching cooking and pastry classes. I love traveling, and one of my favorite things to do is to take cooking/baking classes in the places I visit, and incorporate new and interesting ideas and flavors to the desserts I make back home.
